Chicken Souiza Cornbread Bake

- 1/2 cup butter shopping list
- 1 onion, finely chopped shopping list
- 1 clove garlic, minced shopping list
- 1 (15.25 oz) can whole kernel corn shopping list
- 1 (15 oz). can cream-style corn shopping list
- 1/4 tsp salt shopping list
- 1 egg, slightly beaten shopping list
- 1 (8.5 oz) package cornbread mix ( I used a box of Jiffy) shopping list
- 2 1/3 cups chopped cooked chicken breast (I sometimes use the ready to serve chicken strips) shopping list
- 8 oz. package of sliced mushroom shopping list
- 1 1/2 cups sour cream shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp ground pepper shopping list
- 1 (8 oz )monterey jack cheese, shredded shopping list
How to make it
- Preheat oven to 375 degrees F. Grease 13 x 9 baking dish.
- Melt butter in a small skillet over medium-high heat. Saute onion and garlic until tender, 4-6 minutes. Set aside. In same skillet saute mushrooms until cooked through. Set aside.
- In a large bowl, combine corn, cream style corn, salt and eggs. Beat in cornbread mix. Fold in cooked onion mixture.
- Pour into the baking dish.
- In a large bowl combine chicken, mushrooms, sour cream, salt and pepper.
- Spoon over corn mixture to within 1" from edge. Sprinkle top with cheese.
- Bake in oven for 35 to 40 mintues or until edges are golden brown.
