Noodle Pudding Recipe
An old favorite from my mother, the recipe has orgins lost in antiquity, but was a favorite at our winter dinner table.

Ingredients
  • 1 lb. wide noodles
  • 1 pint sour cream
  • 1 pint cottage cheese
  • salt and pepper
  • 3 eggs
  • 1/4 lb. butter
  • 1 cup milk
  • 1 1/2 cup sugar
  • 2 teaspoons cinnamon
  • raisins or apple slices may be added, optional

Directions
  1. Cook noodles according to directions and drain
  2. beat eggs with milk
  3. add sour cream and cottage cheese to milk mixture
  4. add sugar and cinnamon to milk/cheese mixture, mix well
  5. combine noodles with milk/cheese mixture
  6. add fruit if desired
  7. pour into buttered 9"x13" baking dish, sprinkle top with cinnamon
  8. bake 45 min at 350 degrees F. or until nicely browned.
  9. serve warm or at room temperature.

My mother made this one, too. Comfort soul food.


As i look at the recipe today tho.. i think the sugar could be cut in half and the difference would go unnoticed. i have halved the sugar in a good many recipies and the difference is not noticed for the most part. in the future i think that is what i will do.. at least once to check it out.
