Crazy Cajun fishnchips

- 1 cup [140 g] flour shopping list
- 1/4 cup cornstarch shopping list
- 1/2 cup of half cooked cornmeal shopping list
- 1 egg shopping list
- 1 2/3 cups red ale shopping list
- 1 teaspoon [5 mL] salt shopping list
- 1/2 teaspoon of freshly ground pepper shopping list
- 2 pounds firm boneless fish fillets, patted dry (recommend cod, haddock or shark) shopping list
- ---cajun rub--- shopping list
- 1 tablespoon paprika shopping list
- 1/2 tablespoon garlic powder shopping list
- 1 tablespoon onion powder shopping list
- 2 teaspoons dried lemon zest shopping list
- 2 teaspoons pepper shopping list
- 1 teaspoon dried tarragon shopping list
- 1 teaspoon dried basil shopping list
- 1/2 teaspoon cayenne pepper shopping list
- 1/4 teaspoon salt shopping list
- 1/2 Teaspoon red saffron shopping list
How to make it
- Mix all ingredients of the cajun rub together
- Brush the fish fillets lightly with canola oil and sprinkle with 1/2 teaspoon of the Cajun rub on each side, then press it in with your fingers.
- reserve the fish fillets
- Into a large shallow bowl, whisk together flour cornstarch cornmeal and 1 tablespoon of Cajun Rub.
- Into a clean bowl, beat together egg, red ale, salt and pepper, until smooth.
- Slowly whisk egg mixture into flour mixture, until smooth.
- Dip fish fillets, one at a time, into batter and be carefull not to remove the rub.
- Deep-fry into batches into hot 375°F oil for 4 to 7 minutes, depending on size and thickness of fish.
- turn fish over as often as needed for an even frying.
- Remove when golden brown.
- Leave to drain onto paper toweling before serving.
