How to make it

  • Mix all ingredients of the cajun rub together
  • Brush the fish fillets lightly with canola oil and sprinkle with 1/2 teaspoon of the Cajun rub on each side, then press it in with your fingers.
  • reserve the fish fillets
  • Into a large shallow bowl, whisk together flour cornstarch cornmeal and 1 tablespoon of Cajun Rub.
  • Into a clean bowl, beat together egg, red ale, salt and pepper, until smooth.
  • Slowly whisk egg mixture into flour mixture, until smooth.
  • Dip fish fillets, one at a time, into batter and be carefull not to remove the rub.
  • Deep-fry into batches into hot 375°F oil for 4 to 7 minutes, depending on size and thickness of fish.
  • turn fish over as often as needed for an even frying.
  • Remove when golden brown.
  • Leave to drain onto paper toweling before serving.
