It is a very unique fish'n'chips of my entire creation. i received many wows from friends. It very tasty and can be accompanied by a chipotle tartar sauce .

Ingredients
  • 1 cup [140 g] flour
  • 1/4 cup cornstarch
  • 1/2 cup of half cooked cornmeal
  • 1 egg
  • 1 2/3 cups red ale
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon of freshly ground pepper
  • 2 pounds firm boneless fish fillets, patted dry (recommend cod, haddock or shark)
  • ---cajun rub---
  • 1 tablespoon paprika
  • 1/2 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried lemon zest
  • 2 teaspoons pepper
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried basil
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/2 Teaspoon red saffron

Directions
  1. Mix all ingredients of the cajun rub together
  2. Brush the fish fillets lightly with canola oil and sprinkle with 1/2 teaspoon of the Cajun rub on each side, then press it in with your fingers.
  3. reserve the fish fillets
  4. Into a large shallow bowl, whisk together flour cornstarch cornmeal and 1 tablespoon of Cajun Rub.
  5. Into a clean bowl, beat together egg, red ale, salt and pepper, until smooth.
  6. Slowly whisk egg mixture into flour mixture, until smooth.
  7. Dip fish fillets, one at a time, into batter and be carefull not to remove the rub.
  8. Deep-fry into batches into hot 375°F oil for 4 to 7 minutes, depending on size and thickness of fish.
  9. turn fish over as often as needed for an even frying.
  10. Remove when golden brown.
  11. Leave to drain onto paper toweling before serving.
