Bulgur Walnut Salad Recipe
Easy and healthy - great as a side or even a main dish. Hearty and filling!

Ingredients
  • 1 cup bulgur
  • 1/2 cup minced celery
  • 1/3 cup minced chives
  • 1/3 cup chopped dates
  • 1/3 cup chopped walnuts
  • 3 tbsp lemon or lime juice
  • 2 tsp olive oil
  • 1/8 tsp cinnamon

Directions
  1. Place bulgur in medium sized bowl, cover with water.
  2. Set aside until bulgur has absorbed water - approx. 20 min.
  3. Drain and squeeze out excess water.
  4. Fluff with a fork.
  5. Add celery, chives, dates, and nuts.
  6. In glass measuring cup, whisk together lemon juice, olive oil, and cinnamon.
  7. Pour dressing over bulgur mixture and mix together.
  8. Serve!

This sounds good do you think you could replace bulgur wheat with quinoa? I think it might work.
