Ingredients

1/4 cup honey

1 tbs extra virgin olive oil

juice of 2 limes (I used bottled lime juice about 6 tbs)

1 tbs hot sauce

1/4 cup parsley

1/4 cup chopped cilantro

1 ripe mango cut into strips (ripe but not too soft)

1/2 small head purple cabbage shredded

salt and pepper to taste

Directions

whisk together honey, olive oil, lime juice, and hot sauce

add parsley, cilantro, mango and cabbage

toss well to combine

I made this today. I was concerned that the red cabbage would be too stiff and bitter. I was so pleased with how bright and fresh it was with the mango and honey dressing. The citrus did its trick perfectly in "cooking" the cabbage to a perfect softness and the tangy sweetness makes this slaw simply perfect. High 5.
