Mashawns Paella Casserole Recipe
A woman I work with gave me this easy, delicious version of the classic Spanish paella. Simple and impressive mid-week dinner. Add some crusty bread and as bottle of wine.

Ingredients
  • 1 pound Italian sausage, cut into 1" pieces and browned
  • 1/2 cup oil
  • 2 pounds chicken, cut up into bite size pieces
  • 1 pound boneless pork
  • 2 cups onion, chopped
  • 1 clove garlic, crushed
  • 3 cups rice, uncooked (not instant)
  • 3 cans chicken broth
  • 2 cups water
  • 2 chicken bouillon cubes
  • 1 bay leaf
  • 1 1/2 pounds shrimp, raw
  • 10 ounces frozen peas
  • 1 teaspoon oregano
  • 1 package Goya seasoning
  • 1/4 teaspoon pepper
  • 2 cans tomatoes, peeled and chopped

Directions
  1. Brown and drain sausage. Put into 4 1/2 qt. shallow baking dish. Heat oil. Brown chicken and pork and add to baking dish. Saute garlic and onion in oil. Add raw rice, oregano, Goya and pepper to skillet. Cook 10 minutes. Add tomatoes, broth, bay leaf, bouillon and water. Bring to boil. Spoon or pour over meat in baking dish. Cover and bake 1 hour at 350. Place shrimp and peas on top and bake for 20 more minutes uncovered.
