Mediterranean Shrimp Stew

- 24 large, peeled and de-veined shrimp shopping list
- olive oil for sauteing shopping list
- 1, 15 ounce can of white beans, drained shopping list
- 2 cups sliced, marinated artichokes shopping list
- 1 cup chopped roasted red peppers shopping list
- 1 to -1 1/2 cups bottled clam juice shopping list
- salt and red pepper flakes to taste shopping list
How to make it
- Start by heating a little olive oil in a medium hot pan.
- Season the shrimp with salt and pepper to taste.
- When the oil starts to shimmer, carefully add the shrimp and toss them around as they start to cook and change color. (You might have to do this in batches.)
- After a couple of minutes, when the shrimp are mostly cooked through, remove them from the pan.
- Add the bottled clam juice to the pan and let it cook down for a few minutes.
- After it's reduced a bit, add the combination of white beans, sliced roasted red peppers and artichoke hearts to the pan and let that mixture start to simmer.
- Then add the shrimp back to the pan and let those finish cooking through.
- Season it with a little salt to taste and a few red pepper flakes if you like and it’s ready to serve!
- HINTS:
- Substitute chicken broth for the clam juice if you like!
- Add a little chopped fresh basil or basil pesto for added flavor.
- Serve with some crusty bread on the side.
