How to make it

  • Start by heating a little olive oil in a medium hot pan.
  • Season the shrimp with salt and pepper to taste.
  • When the oil starts to shimmer, carefully add the shrimp and toss them around as they start to cook and change color. (You might have to do this in batches.)
  • After a couple of minutes, when the shrimp are mostly cooked through, remove them from the pan.
  • Add the bottled clam juice to the pan and let it cook down for a few minutes.
  • After it's reduced a bit, add the combination of white beans, sliced roasted red peppers and artichoke hearts to the pan and let that mixture start to simmer.
  • Then add the shrimp back to the pan and let those finish cooking through.
  • Season it with a little salt to taste and a few red pepper flakes if you like and it’s ready to serve!
  • HINTS:
  • Substitute chicken broth for the clam juice if you like!
  • Add a little chopped fresh basil or basil pesto for added flavor.
  • Serve with some crusty bread on the side.
