Toasted Coconut Pie Recipe
This is Barbara Bryan Duhe's recipe, found in a newspaper once upon a time

Ingredients
  • 3 eggs, beaten
  • 1-1/2 cups sugar
  • 1/2 cup melted butter
  • 4 tsps lemon juice
  • 1 tsp. vanilla
  • 1 3-1/2 ounce can flaked coconut
  • 1 8-inch unbaked pastry shell

Directions
  1. Combine filling ingredients.
  2. Pour into pie shell and bake at 350 degrees for 40 to 45 minutes.
  3. Enjoy!
