Super Sengegalese Soup Recipe

Ingredients
  • 2 medium onions, minced
  • 2 large stalks celery, finely chopped
  • 2 apples (any variety) cored and chopped
  • 2 Tbsp Butter
  • 2 Tbsp Curry powder
  • 1/4 cup flour
  • 4 cups Chicken Broth (may be canned)
  • Cayenne Pepper and Salt, to taste
  • 1 cup, COOKED Chicken, coarsely chopped
  • 2 cups CHILLED half and half
  • Avocado slices and Lime for garnish

Directions
  1. Saute onions, celery and apples in butter until tender (do not brown).
  2. Add curry powder, cook and stir 2 minutes.
  3. Blend in flour, cook and stir for 2 minutes.
  4. Gradually add chicken stock, cook and stir until smooth and thickened.
  5. Season with cayenne and salt.
  6. Add chicken and cool.
  7. Blend (in batches) in a blender or food processor.
  8. Add half and half, stir to incorporate
  9. Refrigerate until thoroughly chilled
  10. Serve in chilled bowls with sliced avocado slices and lime
  11. May also serve warm
  12. It is better served COLD !
