Ingredients

How to make it

  • Saute onions, celery and apples in butter until tender (do not brown).
  • Add curry powder, cook and stir 2 minutes.
  • Blend in flour, cook and stir for 2 minutes.
  • Gradually add chicken stock, cook and stir until smooth and thickened.
  • Season with cayenne and salt.
  • Add chicken and cool.
  • Blend (in batches) in a blender or food processor.
  • Add half and half, stir to incorporate
  • Refrigerate until thoroughly chilled
  • Serve in chilled bowls with sliced avocado slices and lime
  • May also serve warm
  • It is better served COLD !
