Super Sengegalese Soup

- 2 medium onions, minced shopping list
- 2 large stalks celery, finely chopped shopping list
- 2 apples (any variety) cored and chopped shopping list
- 2 Tbsp butter shopping list
- 2 Tbsp curry powder shopping list
- 1/4 cup flour shopping list
- 4 cups chicken broth (may be canned) shopping list
- cayenne pepper and salt, to taste shopping list
- 1 cup, cooked chicken, coarsely chopped shopping list
- 2 cups CHILLED half and half shopping list
- avocado slices and lime for garnish shopping list
How to make it
- Saute onions, celery and apples in butter until tender (do not brown).
- Add curry powder, cook and stir 2 minutes.
- Blend in flour, cook and stir for 2 minutes.
- Gradually add chicken stock, cook and stir until smooth and thickened.
- Season with cayenne and salt.
- Add chicken and cool.
- Blend (in batches) in a blender or food processor.
- Add half and half, stir to incorporate
- Refrigerate until thoroughly chilled
- Serve in chilled bowls with sliced avocado slices and lime
- May also serve warm
- It is better served COLD !
