How to make it

  • Preheat the oven to 450*F.
  • Bake chicken legs/thighs in oven until done and juices run clear.
  • Remove form the oven.
  • When the chicken is cool enough remove the meat from the bones, set aside.
  • Boil rice as per package directions.
  • In a large bowl mix remaining ingredients together.
  • When every thing has cooled.
  • Add rice, then veggies over chicken and bake for 10 minutes

    This sounds so good Silver, we don't do much gumbo up here, but I sure would like to! My husband and I love anything creamy/gravyish and I can't get fresh okra, but I can get frozen!
