How to make it

  • In a food processor, mix marinate sauce ingredients until it becomes a paste.
  • Marinate the chicken pieces in the marinate sauce for about 1 hour or overnight.
  • In a pot, boil the chicken along with the marinate sauce at low heat. Add salt, lemon grass, bay leaves and water.
  • Keep the pot covered until water is absorbed.
  • Remove pot from stove and let it cool.
  • Heat enough cooking oil in a pan.
  • Deep fry the cooked chicken pieces until golden brown.
  • Remove chicken from oil.
  • Put chicken on paper towels to absorb oil.
  • Note: For a healthier option, broil chickens in a preheated 350F oven for 20 minutes or until chicken are golden brown

    Galangal is a root in the ginger family. It is also known as Ka in Thai as well as Laos. There is no substitute for the flkavor of Galanga. You can find this in Asian grocery storesthat have a southeast Asian clientele. It comes fresh, frozen, powdered or dried (in pieces or slices). Fresh is best, followed by frozen (usually whole). Enjoy. I love Indonesian Ayam Goreng (ayam is chicken and goreng is fried). The kuning is yellow as the food takes on the color of the turmeric.

    I am wondering what Galangal is..and if it can be replaced if it is not available where I am
    I have lemon Grass in my garden but I also do not have salam leaves ..
