Ingredients

28 oz. Sauerkraut (minus the few tablespoons you used for your dogs!)

1 cup diced celery

1 cup diced green pepper

½ cup diced red pepper

1/4 cup diced onion

3/4 cup sugar

1 tsp. Celery seed

3 tbsp. Vinegar

salt and pepper to taste

Directions

Drain sauerkraut. Rinse. Squeeze dry. Put into large bowl. Add rest of ingredients. Mix together well. Let stand covered in the fridge overnight before serving.

Yummo, I make this almost every New Year's Day. It is really delicious exactly like this. I'm not a big fan of green pepper, so I double up on the red pepper and use green onion tops for the onion so it still has that "holiday" look. This is great stuff. Gets my 5! Too funny about "minus the 2 T. you used for your dogs"!

This looks interesting, I've never had saurkraut but I love full sour kosher pickles, corned beef or Montreal Smoked meat sammies with mustard, and any kind of cabbage (but Napa... ick). I'm guessing this would be a hit at least with me!
