How to make it

  • Roll the dough out on a large oiled pan (jellyroll size). Pre-bake the dough at 450 degrees for about 10 minutes.
  • Saute onion in olive oil. Add garlic, salt and pepper after 4-5 minutes. Transfer to bowl.
  • Heat a little more oil in the pan and wilt the spinach with a little more garlic. When spinach is wilted but still bright green (about 1 minute), put it in a strainer to cool. Squeeze out excess moisture, then coarsely chop it and toss with lemon juice.
  • Brush the dough with olive oil and sprinkle with garlic. Layer onions, spinach, tomatoes, red pepper, artichoke hearts, olives, feta, mozzarella and sprinkle with spices.
  • Bake pizza at 500 degrees 12 minutes or until cheese is melty and brownish.

    Your pizza looks really good to me. I am far from a vegetarian but I like my pizza best with no meat. I don't know why! I just thought--I have a recipe for a low fat pesto that's good on ANY pizza. Maybe I should post it!
