Swordfish and Sketti

- 1 pound whole-wheat spaghetti shopping list
- 1/4 cup water shopping list
- 1/2 large onion, peeled and diced shopping list
- 1 1/2 pounds peeled ripe tomatoes, diced shopping list
- 1 pound kale (preferably Tuscan-style or curly), chopped shopping list
- 1 pound swordfish, skinned and cubed into 1/2" pieces shopping list
- salt and pepper, to taste shopping list
- 1/4 cup arugula, minced shopping list
How to make it
- In a large pot of boiling, salted water, cook spaghetti until just shy of "al dente" - about 5-6 minutes. Drain and keep warm.
- Heat water in a large skillet.
- Add the onion and saute 6-7 minutes.
- Add tomatoes and cook 10 minutes.
- Add the kale and swordfish, season to taste, and cook 3 minutes.
- Stir in arugula and cooked spaghetti, tossing well to coat.
- Serve immediately.

aninteresting quick dinner after work.. and i love the concept of using the swordfisn instead of ground pork or beef. i'll bet it would be good with some skinless bonless chicken as well.. the chicken would have to be sauteed first of course. a neat ...more
