How to make it

  • In a large pot of boiling, salted water, cook spaghetti until just shy of "al dente" - about 5-6 minutes. Drain and keep warm.
  • Heat water in a large skillet.
  • Add the onion and saute 6-7 minutes.
  • Add tomatoes and cook 10 minutes.
  • Add the kale and swordfish, season to taste, and cook 3 minutes.
  • Stir in arugula and cooked spaghetti, tossing well to coat.
  • Serve immediately.

    Love it...gotta be careful not to overcook the swordfish. Flavor is best if not cooked past medium.

    misterpeter ate it and said...
    aninteresting quick dinner after work.. and i love the concept of using the swordfisn instead of ground pork or beef. i'll bet it would be good with some skinless bonless chicken as well.. the chicken would have to be sauteed first of course. a neat idea! i printed it off and will give it a try.
