Swordfish And Sketti Recipe
Adapted from Bon Appeteit, this is a delicious, light and healthy meal with whole grain pasta, greens and swordfish coming together!

Ingredients
  • 1 pound whole-wheat spaghetti
  • 1/4 cup water
  • 1/2 large onion, peeled and diced
  • 1 1/2 pounds peeled ripe tomatoes, diced
  • 1 pound kale (preferably Tuscan-style or curly), chopped
  • 1 pound swordfish, skinned and cubed into 1/2" pieces
  • Salt and pepper, to taste
  • 1/4 cup arugula, minced

Directions
  1. In a large pot of boiling, salted water, cook spaghetti until just shy of "al dente" - about 5-6 minutes. Drain and keep warm.
  2. Heat water in a large skillet.
  3. Add the onion and saute 6-7 minutes.
  4. Add tomatoes and cook 10 minutes.
  5. Add the kale and swordfish, season to taste, and cook 3 minutes.
  6. Stir in arugula and cooked spaghetti, tossing well to coat.
  7. Serve immediately.

Aninteresting quick dinner after work.. and i love the concept of using the swordfisn instead of ground pork or beef. i'll bet it would be good with some skinless bonless chicken as well.. the chicken would have to be sauteed first of course. a neat idea! i printed it off and will give it a try.


Love it...gotta be careful not to overcook the swordfish. Flavor is best if not cooked past medium.
