Turkey Chilaquiles

- 2 Tablespoons vegetable oil shopping list
- 1 1/2 cups red onion, chopped, divided shopping list
- 2 cups turkey, cooked and diced shopping list
- 4 ounces green chiles (1 can) shopping list
- 3 cups salsa, medium-hot with chipotles and garlic - from 2 16-ounce jars) shopping list
- 4 cups tortilla chips, unsalted shopping list
- 2 cups feta cheese, crumbled shopping list
- sour cream, to drizzle shopping list
How to make it
- Preheat oven to 450.
- Heat oil in heavy large skillet. Add 1 1/4 cups onion; saute until onion begins to soften. Add turkey and chiles; saute 3 minutes. Stir in salsa; simmer until heated through. Season with salt and pepper. Stir in chips and half the cheese. Sprinkle top with the rest of the cheese. Place skillet in oven; bake just until cheese melts, about 5 minutes. Sprinkle with remaining onion and drizzle with sour cream. Serve.
