Turkey Chilaquiles Recipe
This is a fav for leftover turkey - or chicken. When we have leftover turkey from the grill, this is a fav for those scraps you don't know what to do with. Delish!

Ingredients
  • 2 Tablespoons vegetable oil
  • 1 1/2 cups red onion, chopped, divided
  • 2 cups turkey, cooked and diced
  • 4 ounces green chiles (1 can)
  • 3 cups salsa, medium-hot with chipotles and garlic - from 2 16-ounce jars)
  • 4 cups tortilla chips, unsalted
  • 2 cups feta cheese, crumbled
  • sour cream, to drizzle

Directions
  1. Preheat oven to 450.
  2. Heat oil in heavy large skillet. Add 1 1/4 cups onion; saute until onion begins to soften. Add turkey and chiles; saute 3 minutes. Stir in salsa; simmer until heated through. Season with salt and pepper. Stir in chips and half the cheese. Sprinkle top with the rest of the cheese. Place skillet in oven; bake just until cheese melts, about 5 minutes. Sprinkle with remaining onion and drizzle with sour cream. Serve.
