Beef Stroganoff Meatballs Recipe
This is a change of pace for the original Beef Stroganoff. The meatballs can be made ahead and frozen to save time.

Ingredients
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 2 tsp. Worcestershire sauce
  • 1 1/2 cups soft bread crumbs
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 1/2 lbs. ground beef
  • Sauce:
  • 1 1/2 cups fresh sliced mushrooms
  • 1/2 cup chopped onion1/4 cup butter or margarine
  • 4 Tbsp. all-purpose flour, divided
  • 1/4 tsp. salt
  • 1 1/2 cups beef broth
  • 1 cup (8-oz.) sour cream
  • Hot coofed noodles
  • Paprika, optional

Directions
  1. In a bowl, combine the egg, milk, onion and Worcestershire sauce.
  2. Stir in bread crumbs, salt and pepper.
  3. Add beef; mix well.
  4. Shape into 1 1/4 -in. balls.
  5. Place in a lightly greased 15x10x1-in. baking pan.
  6. Bake, uncovered, at 350 degrees for 15-20 minutes or until meat is no longer pink.
  7. In a saucepan, saute mushrooms and onion in butter until tender.
  8. Stir in 3 Tbsp. flour and salt until blended.
  9. Gradually add broth.
  10. Bring to a boil over medium heat.
  11. Cook and stir for 2 minutes; reduce heat.
  12. Combine sour cream and remaining flour until smooth; stir into mushroom mixture.
  13. Add meatballs.
  14. Simmer, uncovered, for 4-5 minutes or until heated through, stirring occasionally.
  15. Serve over noodles.
  16. Sprinkle with paprika if desired.
