How to make it

  • Combine the butter, sun-dried tomatoes, chile, chili sauce, zest, lime juice, cilantro, salt and pepper in a small bowl and mix well to incorporate.
  • Rinse the chickens with cold water and pat dry with a paper towel. Rub inside and out with the chili paste.
  • Place on a plate, cover and marinate for 2 to 4 hours in the refrigerator.
  • Cook as desired.
