Lemon Chicken Schnitzel Recipe
When the weather is nice, we want to spend less time in the kitchen. This quick and easy way of making chicken schnitzel is really kid and adult friendly.

Ingredients
  • 4 chicken breast, pounded to 1/2 inch thickness
  • salt and pepper
  • 2 eggs, beaten in shallow dish
  • 1 1/2 c of italian breadcrumbs or your favourite breadcrumbs with some herbs and cheese
  • 2 tbsp butter
  • 1 lemon cut into wedges

Directions
  1. Salt and pepper chicken.
  2. Dip into egg and then onto breadcrumbs. Repeat until all 4 have been done.
  3. Heat skillet and melt butter.
  4. Cook chicken until golden on each side over medium heat. Depending on your stove, approx. 2 minutes per side. Until chicken is firm to touch.
  5. Serve with a side of lemon, garlic mash potatoes and corn.

This sounds great, corn and garlic mash would be the perfect sides also....... ;-)~
