Lemon Chicken Schnitzel

- 4 chicken breast, pounded to 1/2 inch thickness shopping list
- salt and pepper shopping list
- 2 eggs, beaten in shallow dish shopping list
- 1 1/2 c of Italian breadcrumbs or your favourite breadcrumbs with some herbs and cheese shopping list
- 2 tbsp butter shopping list
- 1 lemon cut into wedges shopping list
How to make it
- Salt and pepper chicken.
- Dip into egg and then onto breadcrumbs. Repeat until all 4 have been done.
- Heat skillet and melt butter.
- Cook chicken until golden on each side over medium heat. Depending on your stove, approx. 2 minutes per side. Until chicken is firm to touch.
- Serve with a side of lemon, garlic mash potatoes and corn.
