Very easy and delicious quiche. This makes up very quickly, taste like it took much longer!

Ingredients
  • 7 1/2 oz. fresh limp crabmeat
  • 4 oz. swiss cheese, grated
  • 4 eggs
  • 2 cups heavy cream
  • 1/3 cup onion, minced
  • 1 tsp. salt
  • 1/4 tea. cayenne pepper
  • 1 TBS. fresh parsley, chopped
  • 1 pie crust

Directions
  1. Preheat oven to 425*
  2. Prepare crust as directed.
  3. Into the crust dump, crabmeat, all cheese.
  4. In a bowl, beat eggs, cream, onion, slat and cayenne until blended.
  5. Pour mixture over crab and cheese
  6. Sprinkle parsley over top
  7. Place pan on cookie sheet and set on middle rack in oven.
  8. Bake at 425* for 15 minutes
  9. Reduce heat to 300*
  10. Bake 30 minutes more or until knife comes out clean
  11. Remove quiche from oven and let cool 10 minutes.
