I make this dish every time we have a get together it disappears fast so good and yummy, I have a big salad, dressing, homemade Italian bread, sweet iced tea or mixed drinks, sodas, beer plus other goodies.

Ingredients
  • 1 can (14-1/2 oz.) diced tomatoes, undrained
  • 1 pkg. (6-oz.) Stove Top stuffing mix for chicken
  • 1/2 cup water
  • 2 garlic cloves, minced
  • 1-1/2 lb. boneless, skinless chicken breast, cut into bite size pieces
  • 1 tsp. dried basil leaves, crushed
  • 1 cup shredded mozzarella cheese

Directions
  1. Preheat the oven to 400*F.
  2. Place the tomatoes with their liquid in medium bowl.
  3. Add stuffing mix, water and garlic., stir just until stuffing mix is moistened, set aside.
  4. Place chicken in 13x9" baking dish.
  5. Sprinkle with the basil and cheese.
  6. Top with the stuffing mix.
  7. Bake 30 minutes or until chicken is cooked through.
