Ginger Chicken Ramen Stir-fry Recipe
From Top Ramen Cookbook by E. Prngel & H. Spyker, Prima Publishing. It was featured in Houston Chronicle a few years ago. I've made many times & is a keeper.

Ingredients
  • 2 packs Ramen noodles - at least 1 oriental flavor - low fat is ok
  • 2 T olive oil
  • 1 T soy sauce - low sodium is ok
  • 1/2 t fresh minced ginger
  • 1 garlic clove chopped
  • 3/4 lb. skinless boneless chicken breast cut into strips
  • 1/2 c small broccoli florets or chopped broccoli w/ stalks
  • 1 small onion chopped
  • 1 yellow bell pepper seeded & chopped
  • 1 tomato chopped small

Directions
  1. Cook ramen noodles as per package reserving flavor packets.
  2. Drain noodles & set aside.
  3. In small bowl mix oil, both seasoning packets, soy sauce, ginger & garlic.
  4. Pour sauce into heated skillet.
  5. Add chicken & brown on all sides.
  6. Add broccoli & onion.
  7. Saute 2 minutes.
  8. Stir in bell pepper & tomato.
  9. Heat until all veggies are limp.
  10. Serve over noodles.

Sounds good. Easy and great. Check out my Japanese Steak and Noodles recipe. It's another one like this but with steak.
