Ginger Chicken Ramen Stir-fry

- 2 packs ramen noodles - at least 1 oriental flavor - low fat is ok shopping list
- 2 T olive oil shopping list
- 1 T soy sauce - low sodium is ok shopping list
- 1/2 t fresh minced ginger shopping list
- 1 garlic clove chopped shopping list
- 3/4 lb. skinless boneless chicken breast cut into strips shopping list
- 1/2 c small broccoli florets or chopped broccoli w/ stalks shopping list
- 1 small onion chopped shopping list
- 1 yellow bell pepper seeded & chopped shopping list
- 1 tomato chopped small shopping list
How to make it
- Cook ramen noodles as per package reserving flavor packets.
- Drain noodles & set aside.
- In small bowl mix oil, both seasoning packets, soy sauce, ginger & garlic.
- Pour sauce into heated skillet.
- Add chicken & brown on all sides.
- Add broccoli & onion.
- Saute 2 minutes.
- Stir in bell pepper & tomato.
- Heat until all veggies are limp.
- Serve over noodles.
