  • Dough
  • 1 stick butter, unsalted, cold and diced
  • 1/4 cup sugar
  • 1 egg yolk
  • 2 cups flour
  • Filling
  • 1 1/2 cups sour cream
  • 1/2 cup sugar
  • 4 tbls. flour
  • 1 egg
  • 1 tsp. vanilla
  • Pinch of salt
  • 5 ripe pears, peeled, cored and sliced 1/8 in. thick
  • Streusel
  • 1 stick butter, cold and diced
  • 1/2 cup light brown sugar, firmly packed
  • 1/2 cup sugar
  • 1 cup flour
  • 1 cup whole oats

Directions
  1. Preheat oven to 350
  2. Dough
  3. In a mixing bowl, beat butter and sugar until they just come together There will be lumps
  4. Add yolk and mix until combined
  5. Add flour and mix until smooth
  6. Dough will be crumbly at first but will hold together
  7. Put in plastic wrap, flatten into a disc and chill until firm
  8. Roll out to 1/4-inch thickness
  9. Put in a 10 in. tart pan
  10. Bake for 15 to 20 minutes, or until lightly colored.
  11. Cool
  12. Filling
  13. In a medium bowl, add sour cream, sugar, flour, egg, vanilla extract and salt and mix
  14. Add pears and toss gently to coat
  15. Spoon pear mixture into tart shell
  16. Streusel
  17. In mixing bowl, add butter and sugars
  18. Mix until crumbly
  19. Gradually add flour and mix until incorporated
  20. Add oats and mix until combined
  21. Top pear mixture with streusel
  22. Bake for 35-45 minutes or until streusel and crust are golden
