Colorful Egg Casserole Recipe

Ingredients

1 pound bulk pork sausage

4 ounces mushrooms

1/2 cup sliced green onion

2 medium tomatoes peeled and chopped

2 cup shredded Mozzarella

1-1/4 cup baking mix

10 eggs

1 cup milk

1-1/2 teaspoons salt

1/2 teaspoon freshly ground black pepper

Directions

Combine sausage, mushroom, green onion and cook until sausage is browned.

Drain well then return to skillet.

Stir in tomato and cheese.

In mixing bowl mix baking mix, eggs, milk, salt and pepper then pour sausage mixture in buttered rectangular baking dish.

Pour baking mix mixture over top of sausage mixture and bake at 350 for 30 minutes.
