Colorful Egg Casserole

COLORFUL EGG CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Inman Estate in Mineral Wells, Texas in 1990.
Ingredients
- 1 pound bulk pork sausage shopping list
- 4 ounces mushrooms shopping list
- 1/2 cup sliced green onion shopping list
- 2 medium tomatoes peeled and chopped shopping list
- 2 cup shredded Mozzarella shopping list
- 1-1/4 cup baking mix shopping list
- 10 eggs shopping list
- 1 cup milk shopping list
- 1-1/2 teaspoons salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Combine sausage, mushroom, green onion and cook until sausage is browned.
- Drain well then return to skillet.
- Stir in tomato and cheese.
- In mixing bowl mix baking mix, eggs, milk, salt and pepper then pour sausage mixture in buttered rectangular baking dish.
- Pour baking mix mixture over top of sausage mixture and bake at 350 for 30 minutes.
