Barbecued Eggplant

It is that time of the year again when we sacrifice large quantities of meat to the BBQ gods this is for the ones that want something a little different.
Ingredients
- egg plant cut into 1/2" rounds (par boiled} shopping list
- olive oil shopping list
- parmesan cheese shopping list
How to make it
- Wash and cut your egg plant into ½” rounds
- Partially boil the egg plant to soften - do not over cook you do not want them to turn to mush.
- Pat dry and brush with olive oil.
- Grill on the BBQ and sprinkle with cheese as you grill them.
