Ingredients
  • 1 medium potato, diced
  • 1 medium onion, diced
  • 20 oz./600 ml vegetable stock
  • 8 oz./100g buckwheat groats
  • 2 Tbsp chopped fresh parsley
  • 1/2 tsp fresh oregano
  • 1 tsp yeast extract
  • 18 oz./560 ml milk
  • 1 tsp soy sauce

Directions
  1. Bring stock to boil.
  2. Add buckwheat, vegetables, parsley, oregano and yeast extract.
  3. Simmer, covered, for 30 minutes
  4. Check halfway through and add milk if stock level is low.
  5. Liquidize with a hand blender and add milk and soy.
  6. Reduce heat and simmer on low until soup is heated through.
  7. Serve topped with freshly ground black pepper.
