Baked Cod with a Crunchy Lemon Crust

- 6 crackers, crushed coarsely (use gf crackers to make this gf) shopping list
- basil, a light sprinkle or use finely chopped fresh basil shopping list
- 2 tablespoons mayonnaise shopping list
- 1 small garlic clove, minced shopping list
- 1/2 lemon, zest of shopping list
- 1 tablespoon lemon juice, fresh shopping list
- 2 cod fillets shopping list
- salt shopping list
- Hot Shot shopping list
How to make it
- Preheat oven to 450.
- Spray a baking dish with olive oil Pam.
- Combine crushed crackers and basil. Set aside
- Mix mayo, garlic, lemon zest and juice. Set aside.
- Place the fish in the dish and season with salt and Hot Shot.
- Spread the mayo mixture evenly over the fish and then press the crumbs into the mayo.
- Bake 8 to 15 minutes until crumbs are golden brown.
