How to make it

  • IN A LARGE BOWL COMBIBE THE CREAM, SPONGE TOFFEE, LEMON ZEST, CANDIED PEEL, AND LEMON CURD.
  • PLACE A DOLLOP OF THE LEMON CREAM MIXTURE ON A PANCAKE, TOP WITH A--- SECOND PANCAKE , AND ANOTHER DOLLOP OF THE LEMON CREAM MIXTURE ON TOP THEN FINISH WITH A THIRD PANCAKE . REPEAT THE PROCESS SO THAT YOU ARE LEFT WITH 2 TRIPLE DECKERS LEMON PANCAKES.
  • TOAST THE PANCAKE STACKS IN A SANDWICH GRILL FOR 1 TO 2 MINUTES, OR UNITL THE OUTSIDE PANCAKES ARE TOASTED AND THE LEMON CREAM IS BEGINNING TO OOZE FROM THE SIDES.
  • SERVE IMMEDIATELY WITH SOME BLUEBERRIES ON TOP…….GREAT WITH ICE CREAM TOO
  • SERVES 2
