- 1/4 --CUP HEAVY CREAM, PLUS EXTRA TO SERVE shopping list
- 1-1/2 -OUNCES SPONGE TOFFEE, crumbled shopping list
- 1 -- TEASPOON FINELY GRATED lemon zest shopping list
- 1/4--CUP candiED lemon peel , FINELY CHOPPED shopping list
- 1/3 -CUP TRADITIONAL LEMON curd shopping list
- 6 -SCOTCH PANCAKES shopping list
- blueberries TO SERVE shopping list
How to make it
- IN A LARGE BOWL COMBIBE THE CREAM, SPONGE TOFFEE, LEMON ZEST, CANDIED PEEL, AND LEMON CURD.
- PLACE A DOLLOP OF THE LEMON CREAM MIXTURE ON A PANCAKE, TOP WITH A--- SECOND PANCAKE , AND ANOTHER DOLLOP OF THE LEMON CREAM MIXTURE ON TOP THEN FINISH WITH A THIRD PANCAKE . REPEAT THE PROCESS SO THAT YOU ARE LEFT WITH 2 TRIPLE DECKERS LEMON PANCAKES.
- TOAST THE PANCAKE STACKS IN A SANDWICH GRILL FOR 1 TO 2 MINUTES, OR UNITL THE OUTSIDE PANCAKES ARE TOASTED AND THE LEMON CREAM IS BEGINNING TO OOZE FROM THE SIDES.
- SERVE IMMEDIATELY WITH SOME BLUEBERRIES ON TOP…….GREAT WITH ICE CREAM TOO
