Mango And Mint With Warm Blackberry Coulis Dessert Panini

- 1/2 cups blackberries shopping list
- 1/3 cup superfine sugar shopping list
- 2 tablespoons cassis liqueur ( at least 16 % alcohol) shopping list
- 4 thick slices of all- butter brioche shopping list
- 1 small ripe mango, pitted and peeled and finely sliced shopping list
- 6 -8 small mint leaves…shredded shopping list
- powdered sugar for dusting shopping list
How to make it
- In a small pan gently warm 1 cup of the blackberries with 1/4 cup sugar and 2 tablespoons of cold water until the sugar dissolves completely.
- Allow the mixture to bubble gently so that the blackberries collapse, creating a thick fruity liquid.
- Remove from heat and leave to cool.
- Using a blender to puree into a rich smooth coulis, stir in the cassis and set aside.
- Sprinkle 1 tablespoon of the sugar over two slices of the brioche.
- Arrange the mango slices on top and then scatter the shredded mint leaves and remaining blackberries over them.
- Top with the lids and sprinkle the surface with the remaining sugar.
- Toast in a sandwich grill for 2 - 3 minutes, until the bread is golden and crispy.
- Cut sandwiches in half and serve immediately.
- Serve with a drizzle of the warm coulis, some crème fraiche, and mint sprig on each, and dust slighty with powdered sugar………..
