Ingredients

How to make it

  • In a small pan gently warm 1 cup of the blackberries with 1/4 cup sugar and 2 tablespoons of cold water until the sugar dissolves completely.
  • Allow the mixture to bubble gently so that the blackberries collapse, creating a thick fruity liquid.
  • Remove from heat and leave to cool.
  • Using a blender to puree into a rich smooth coulis, stir in the cassis and set aside.
  • Sprinkle 1 tablespoon of the sugar over two slices of the brioche.
  • Arrange the mango slices on top and then scatter the shredded mint leaves and remaining blackberries over them.
  • Top with the lids and sprinkle the surface with the remaining sugar.
  • Toast in a sandwich grill for 2 - 3 minutes, until the bread is golden and crispy.
  • Cut sandwiches in half and serve immediately.
  • Serve with a drizzle of the warm coulis, some crème fraiche, and mint sprig on each, and dust slighty with powdered sugar………..
  • Serves 2.........................YUMMY..........
