Green Tomato Relish

- 4 cups chopped onions shopping list
- 8 cups chopped green tomatoes (25/30 medium) shopping list
- 6 each chopped & seeded red peppers shopping list
- 6 each chopped & seeded green peppers shopping list
- 1/2 cup canning salt shopping list
- 1 tablespoon celery seed shopping list
- 1 1/2 teaspoons turmeric shopping list
- 4 cups white sugar shopping list
- 3 cups cider vinegar shopping list
- 2 cups water shopping list
How to make it
- Mix onions, tomatoes and peppers in a large bowl. Sprinkle 1/2 cup canning salt over all. Let stand in fridge overnight - rinse and drain well in the morning.
- Add the celery seed, turmeric, sugar, vinegar and water to tomato mixture in a large pot. Simmer contents of pot on stove until thick - about 2 hours.
- Spoon hot mixture into jars (you will need at least 6 to 8 pint jars) - use a slotted spoon to take out bubbles. Don't add too much juice!
- Use a knife to get additional air bubbles out of jars before sealing. Put jars into a hot water bath for 20 minutes.
