Ingredients

4 cups chopped onions

8 cups chopped green tomatoes (25/30 medium)

6 each chopped & seeded red peppers

6 each chopped & seeded green peppers

1/2 cup canning salt

1 tablespoon celery seed

1 1/2 teaspoons turmeric

4 cups white sugar

3 cups cider vinegar

2 cups water

Directions

Mix onions, tomatoes and peppers in a large bowl. Sprinkle 1/2 cup canning salt over all. Let stand in fridge overnight - rinse and drain well in the morning.

Add the celery seed, turmeric, sugar, vinegar and water to tomato mixture in a large pot. Simmer contents of pot on stove until thick - about 2 hours.

Spoon hot mixture into jars (you will need at least 6 to 8 pint jars) - use a slotted spoon to take out bubbles. Don't add too much juice!

Use a knife to get additional air bubbles out of jars before sealing. Put jars into a hot water bath for 20 minutes.
