BurritoEnchilada Sauce My Way Recipe
We love our Costco bought chicken burritos with spicy enchilada sauce that I usually have to purchase in the States. Had some burritos the other day but no sauce, so I came up with my own version. Everyone licked their plates!

Ingredients
  • 4-6 cloves garlic, chopped
  • 2T oil,(I use olive)
  • pat of butter
  • 2heaping Tbsp chili powder( not the really hot kind)
  • 1heaping Tbsp cumin
  • pinch salt and pepper
  • 1 14oz. tin tomato sauce
  • 1 tin Rotel brand diced tomatoes with lime and cilantro

Directions
  1. Heat the oil and butter in saucepan over medium-low heat.
  2. Add garlic and saute briefly til softened but not browned or it gets bitter.
  3. Add the spices and stir gently 'til well incorporated.
  4. Increase heat to medium and add the tomato sauce and Rotel tomatoes.
  5. Simmer gently for a few minutes to blend flavors.
  6. Pour over your burritos or enchiladas, top with tex mex cheese and bake @ 350 for about 20 minutes, or until filling heated through.
  7. Serve and wait for happy smiles of appreciation!

Oh, this would be great on anything, including my egg white omelette in the morning. Great sauce.
