Is it a salad or a not-very-liquid Salsa? You decide. Anyway you call it, it's colorful, delicious, and folks will be coming back for more!

Ingredients
  • 1 can White Hominy, drained and rinsed
  • 1 can Black Beans, drained and rinsed
  • 1 can (4 oz) Diced Green Chiles
  • 2 cups Cherry of Grape Tomatoes
  • 1 Green Bell Pepper, diced
  • 1Yellow or Orange Bell Pepper, diced
  • 1 Red Onion, diced
  • 1 cup Salsa Verde, Green Chile Enchilada Sauce or Green Taco Sauce
  • 1 bag Blue Corn Tortilla Chips

Directions
  1. In a large bowl toss to combine everything except the last two ingredients
  2. Arrange mixture on a large platter.
  3. Surround mixture with a ring of Blue Corn chips
  4. Top dress the mixture with the 'green sauce'
