Mussels Marinara Recipe
This is an easy and delicious marinara sauce for mussels or could be used for shrimp and other fishes - use your imagination! Serve over pasta and with a nice salad for an easy delicious dinner.

Ingredients
  • 2 lbs. large mussels
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 garlic cloves, crushed and chopped
  • 1 large carrot, very finely diced
  • 1 cup dry white wine
  • 1 bay leaf
  • 1/4 teaspoon thyme
  • 1 14 ounce can diced tomatoes with juice
  • 1 tablespoon tomato sauce
  • 1 tablespoon parsley
  • salt and pepper to taste

Directions
  1. Melt butter in a frying pan, add the veggies and cook at medium for about 5 minutes. Don't let them take on much color but slightly softened.
  2. Add wine, bay leaf, thyme, salt, pepper, diced tomatoes and tomato paste; bring to a boil and let cook another 5 minutes.
  3. Clean the mussels - if mussel is opened tap it - if it does not close it is dead - discard - discard mussels that are not opened after cooking also.
  4. Now add the mussels to the boiling sauce; cover and cook 5 minutes.
  5. Serve in bowls or can be served over pasta
