How to make it

  • Heat oven to 350ºF and lightly grease a 9x13-inch pan with cooking spray.
  • Cream sugar and margarine. then beat in pumpkin and buttermilk.
  • In medium bowl, combine flour, oats, cornstarch, pumpkin pie spice, baking soda and salt.
  • Stir into pumpkin mixture just until moistened.
  • Fold in both types of cranberries.
  • Bake 20-25 minutes.
