Grapefruit And Gorgonzola Salad Recipe
Well...as the name implies, it's a salad featuring grapefruit and gorgonzola. Created when I realized that I had a serfeit of both grapefruit and Italian blue cheese.

Ingredients
  • 2 medium grapefruit
  • 1/4 cup good-quality olive oil
  • fresh ground pepper to taste
  • 1/2 cup crumbled Gorgonzola
  • 4 cups arugula, chicory, or lettuce, torn into bite sized pieces

Directions
  1. Supreme the grapefruit -- peel it, and carefully cut each section of the "meat" of the fruit out of its membrane so that all you have left is grapefruity goodness. Remove seeds.
  2. Save any juice from this process.
  3. Place the greens in an attractive bowl.
  4. Add the grapefruit, juice, oil and pepper to the bowl.
  5. Top with Gorgonzola.
  6. Toss and serve.
