Ingredients
  • 1/2 cup olive oil
  • 1 small red onion, finely chopped
  • 2-1/2 cups grated potato
  • pinch of dried thyme
  • 4 large blinis
  • 1/4 cup mascarpone cheese, plus extra to serve............
  • 1/4 cup oil- cured, pitted black olives halved ( or olives of your choice )
  • salt and pepper to taste

Directions
  1. Heat the olive oil in a large frying pan over medium heat.
  2. add the onion and grated potato and fry gentlu for 10 minutes, turning frequently, until golden and crispy.
  3. stir in the thyme, season well, remove from heat.
  4. spread the bases of two blinis with the mascarpone cheese and carefully spoon the potato mixture over it .
  5. scatter with the olives and top with the remaining blinis.....
  6. toast the blinis in a sandwich grill for 2 to 3 minutes, unitl they are golden and crispy and the filling is hot.
  7. serve immediately with extra mascarpone..........
  8. enjoy yummmmmmmm
