Peaches in Meringue Torte

- 1 1/3 cups of enriched flour shopping list
- 1 1/2 teasp of baking powder shopping list
- 1/2 cup of shortning shopping list
- 1 1/2 cups of sugar shopping list
- 4 eggs shopping list
- 1/2 tsp of almond flavoring shopping list
- 1/3 cup of milk shopping list
- 1/8 tsp of cream of tartar shopping list
- 1 quart of peeled and sliced peaches (can sub fresh strawberries) shopping list
How to make it
- Sift flour, measure, add bakg powder and sift again.
- Cream shortning, gradually add half a cup of sugar, cream together until fluffy.
- Separate ggs and add yolks one at a time to the shortning sugar mix beating well after each addition.
- Add flavoring,
- Add flour and mix alternately with the milk about 1/3 at a time, stirring after each addition, only enough to blend.
- Turn mixture into two 8 inch layer pans well greased and lined with parchment paper or wax paper.
- Spread batter slightly higher around the edges.
- Beat egg whites until frothy, add cream of tartar and beat until just stiff butnot dry.
- Slowly beat in remaining sugar, two tbsp at a time beating each time until smooth and glossy.
- Spread evenly over two layers of batter.
- Bake in 325 degree oven for 40 minutes.
- Cool about 1/2 hour before serving.
- Slice peaches, cut the slices in alf and sweeten to taste.
- Put torte layers together short cake style with peaches between layers and add a few on top.
