Spicy Zucchini Cake

- 1/3 cup boiling water shopping list
- 2 cups finely chopped zucchini (about 3 medium) shopping list
- 2 cups all-purpose flour shopping list
- 1 1/2 cups sugar shopping list
- 1 1/4 teaspoons baking soda shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon ground cinnamon shopping list
- 1 teaspoon ground nutmeg shopping list
- 1 teaspoon ground cloves shopping list
- 1/2 cup vegetable oil shopping list
- 3 eggs shopping list
- 1 teaspoon vanilla shopping list
- 1 cup chopped nuts shopping list
- frosting - shopping list
- lemon Swirl Frosting* shopping list
- 1 (3 ounce) package cream cheese, softened shopping list
- 1/2 cup butter, softened shopping list
- 4 cups powdered sugar shopping list
- 1 teaspoon vanilla shopping list
- 2 to 3 teaspoons grated lemon peel shopping list
- About 3 teaspoons lemon juice shopping list
How to make it
- Pour boiling water over zucchini.
- Preheat oven to 350 degrees.
- Grease and flour oblong pan, 13- x 9- x 2-inches.
- In a large bowl, beat zucchini and remaining ingredients (except frosting) on low speed, scraping bowl constantly.
- Beat on medium speed, scraping bowl occasionally, 2 minutes.
- Pour into pan.
- Bake until wooden pick inserted in center comes out clean, 45 to 50 minutes; cool.
- Frost.
- Lemon Swirl Frosting -
- Beat all ingredients until frosting is fluffy and of spreading consistency.
- If necessary, stir in additional lemon juice, 1 teaspoon at a time.
