Ingredients

How to make it

  • Cook pasta according to package directions. Cool (maybe about 20 minutes or so, so the mayo won't get cooked.)
  • Blend together the rest of the ingredients with cooled pasta.
  • Cool again (that's what the 120 minutes is for. It will also be nice and chilled and the vegetables will be so crunchy!!!! Mmmmmmmmm!!
  • If you would like to add some meat, add some chopped cooked chicken or some cubed ham or even salami would be great.........Oooooooo don't forget about pepperoni.......mmmmmmmmmm!!!
  • If adding the Durkee onions, add at the very possible last minute you can get away with or they will get soggy!!
  • Enjoy!!

Oh yeah, another good one is elbow macaroni cooked in chicken stock, sweet peas, cubed cheese (I use jalapeno jack), bacon crumbles, diced fresh mushrooms sauteed in butter & garlic, and just enough sour cream or blue cheese or ranch dressing to bind (no mayo or just a tablespoon of it to help with binding.) Try it! You might like it! :)

If you wanna make it extra cheesy, cook up a box of white cheddar elbow mac & cheese, cool, add all ingredients above but replace dressing/sour cream with 1/2 cup mayo & 1/2 cup milk & replace cubed cheese with blue cheese crumbles, season to taste & chill for several hours..

Love it - I like to add a dash of mustard & relish too & maybe a little chopped hard boiled egg. Yummy!
