Easy Cheesy Broccoli And Rice Casserole No Canned Soup Recipe
Adapted from a package of frozen baby broccoli florets.

Ingredients
  • 1 (14 ounce) package frozen broccoli florets (baby broccoli florets are best)
  • 2 cups cooked rice
  • 2 cups mild cheddar cheese, shredded
  • 1/2 cup butter-flavored cracker crumbs

Directions
  1. Cook broccoli according to package directions or your preferred method, then drain if you added water. (I like to cook mine in a shallow dish in the microwave, covered, with no water added, for 7-10 minutes, turning the dish once or twice).
  2. Combine cooked broccoli, rice and cheese and place in a greased 2 quart casserole dish.
  3. Top with cracker crumbs.
  4. Bake at 350 just until heated through. Do not overcook or you will have mushy broccoli.
