Easy Cheesy Broccoli and Rice Casserole No Canned Soup

- 1 (14 ounce) package frozen broccoli florets (baby broccoli florets are best) shopping list
- 2 cups cooked rice shopping list
- 2 cups mild cheddar cheese, shredded shopping list
- 1/2 cup butter-flavored cracker crumbs shopping list
How to make it
- Cook broccoli according to package directions or your preferred method, then drain if you added water. (I like to cook mine in a shallow dish in the microwave, covered, with no water added, for 7-10 minutes, turning the dish once or twice).
- Combine cooked broccoli, rice and cheese and place in a greased 2 quart casserole dish.
- Top with cracker crumbs.
- Bake at 350 just until heated through. Do not overcook or you will have mushy broccoli.
