How to make it

  • Cut zucchini lengthwise into 1/4" planks,then cut across the planks to make batons
  • Heat olive oil and butter in medium skillet over med-high heat
  • Add the almonds and saute till zucchini are just tender,about 1 min
  • Transfer zucchini and almonds to a platter Use a vegetable peeler to shave parmesan over top ,if desired

    Love zucchini. Unfortunately, I'm really the only one in the family that does. But I sneak it in many dishes and they are clueless, lol. Sometimes I just fix it for myself. This would be good and I can have it all to myself! Thanks.
