Sauteed zucchini with almonds

- 2 medium zucchini,ends trimmed shopping list
- 2Tbs olive oil shopping list
- 2Tbs(1/4 stick)unsalted butter shopping list
- 1/2c sliced almonds shopping list
- kosher salt and fresh ground pepper shopping list
- 1 oz. parmigiano-reggiano or other quality parmesan cheese shopping list
How to make it
- Cut zucchini lengthwise into 1/4" planks,then cut across the planks to make batons
- Heat olive oil and butter in medium skillet over med-high heat
- Add the almonds and saute till zucchini are just tender,about 1 min
- Transfer zucchini and almonds to a platter Use a vegetable peeler to shave parmesan over top ,if desired

Love zucchini. Unfortunately, I'm really the only one in the family that does. But I sneak it in many dishes and they are clueless, lol. Sometimes I just fix it for myself. This would be good and I can have it all to myself! Thanks.
