WW Tofu Mayo

- Generous ½ cup light silken tofu shopping list
- 1/4 cup low fat buttermilk shopping list
- 1 tbsp. Fresh lemon juice shopping list
- ½ tsp. salt shopping list
- 1/4 tsp. dry mustard shopping list
- Pinch cayenne shopping list
- 2 tbsps. olive oil shopping list
How to make it
- In a blender or food processor, whirl the tofu, buttermilk, lemon juice, salt, mustard, and cayenne until very smooth, scraping the sides frequently, at least 1 minute.
- With the motor running, drizzle in the oil and process until smooth. Use immediately, or cover and refrigerate for up to 1 week. 1 serving = 1 tbsp. = 27 cal, 2 g. fat, 1 point
