WW Tofu Mayo Recipe
This is a buttermilk silken tofu combination, so it is not only low in fact but extremely good for you too! It makes 12 one-tablespoon servings.

Ingredients
  • Generous ½ cup light silken tofu
  • 1/4 cup low fat buttermilk
  • 1 tbsp. Fresh lemon juice
  • ½ tsp. Salt
  • 1/4 tsp. Dry mustard
  • Pinch cayenne
  • 2 tbsps. Olive oil

Directions
  1. In a blender or food processor, whirl the tofu, buttermilk, lemon juice, salt, mustard, and cayenne until very smooth, scraping the sides frequently, at least 1 minute.
  2. With the motor running, drizzle in the oil and process until smooth. Use immediately, or cover and refrigerate for up to 1 week. 1 serving = 1 tbsp. = 27 cal, 2 g. fat, 1 point
