Bourbon Kissed Firecracker Catfish with Bacon

- 6 8 oz. catfish filets (orange Roughy, flounder, or even salmon would also work) shopping list
- 6 slices thick bacon shopping list
- ½ c. olive oil shopping list
- 4 T. soy sauce shopping list
- 4. T. balsamic vinegar shopping list
- 1 T. brown sugar shopping list
- 1 t. sesame oil shopping list
- 1 t. sesame chili oil shopping list
- 2 t. cracked red pepper flakes shopping list
- I T. crushed garlic shopping list
- 1 bunch green onions, minced shopping list
- 2 T. bourbon whiskey shopping list
- canola oil to oil grills shopping list
How to make it
- To make this recipe, in fact to grill fish filets successfully, you must have the right equipment. That is an individual fish grill that allows a single filet to be grilled, and turned, separately.
- Combine all ingredients except fish and bacon in a large bowl and mix thoroughly. Add catfish, rinsed and drained, and marinate in the refrigerator for 6-8 hours.
- Prepare a grill for indirect heating. Generously oil both sides of the fish grills. Carefully stretch out a filet and layer a piece of bacon on top. These do not need to be affixed as they will adhere to the fish in cooking. Close the grills.
- Grill filets, bacon side up on cooler middle part of the grill, for about 4 minutes. Flip the fish grills and cook the other side for about 4 minutes. Depending on the heat of the grill, you may want to put the bacon side of the filet on direct heat for 30 seconds or so to crisp the bacon.
- Using a thin spatula, carefully remove the filets from the grills. Make sure to re-oil the fish grills before making another batch.
- Serves 4-6
