Chicken Carolina Recipe
This is a sweet and tangy chicken recipe I found years ago in Southern Living Magazine. Not quite BBQ and not quite like anything else either! It's delicious served with it's tomato based sauce over rice.

Ingredients
  • 1/3 Cup All Purpose Flour
  • 1 Tablespoon Salt
  • 1/4 Teaspoon Pepper
  • 1 3-lb Frying Chicken, cut up
  • 1/2 Cup Chopped Onion
  • 1/2 Cup Chopped Green Pepper
  • 1 Clove Garlic, minced
  • 1/4 Cup A-1® Steak Sauce
  • 1/3 Cup Seedless Raisins
  • 1 1/3 Cups Catsup
  • 1 Cup Water
  • 1/4 Cup Melted Shortening (or whatever oil you like to fry chicken In)

Directions
  1. Combine flour, salt and pepper and dredge chickn in the mixture.
  2. Saute chicken in a heavy skillet or elecltric skillet in the shortening until browned.
  3. Remove chicken to a paper towell to drain and rest.
  4. Saute onion, peppers and garlic for a few minutes until aromatic and then stir in catcup, water, steak sauce and raisins.
  5. Return chicken to the skillet and simmer at 250 degrees or on low heat for 30-40 minutes,or until chicken is tender, basting occasionally.
  6. Serve with rice
