Cheese Filled Bacon Muffins

- 1 pound bacon, fried, drained and crumbled shopping list
- 1 1/2 cups buttermilk pancake mix shopping list
- 1/2 cup milk shopping list
- 1 egg shopping list
- 1/3 cup green pepper shopping list
- 1/3 cup chopped onion shopping list
- 2 oz. American cheese, cut into 12 (1/2 in) cubes shopping list
How to make it
- Heat oven to 425 degrees
- Grease 12 muffin cups or use baking cup liners
- Lightly spoon pancake mix into measuring cup; level off
- In large bowl, combine mix, milk and 1/3 cup rerserved bacon grease and egg; by hand stir until blended.
- Add bacon, green peppers and onion; stir until mixed.
- Spoon batter into prepared muffin cups, filling 2/3 full.
- Press a cheese cube into center of batter on each muffin.
- Bake 425 degrees for 15 to 20 minutes or until golden brown.
- Immediately remove from pan and serve warm.

I'm wondering if there's a typo or if you left something out; for instance the recipe calls for 1 and 1/2cups of buttermilk OR complete pancake mix. If one uses only buttermilk, shouldn't some kind of flour be added?
