mexican rice

- 1 cup long grain rice shopping list
- 1 1/2 cups water shopping list
- 2 tablespoons olive oil shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/3 green pepper, diced (not chili peppers) shopping list
- 1 large clove garlic, diced shopping list
- 1/4 onion, chopped shopping list
- 1 teaspoon salt shopping list
- 1 large tomato, chopped shopping list
- 2 cups veggie stock shopping list
How to make it
- 1 Heat the oil in a good sized pot. Add the rice and cook on high until the rice starts to brown.
- 2 Once the rice has browned, reduce the heat to medium-high and add all of remaining ingredients except the veggie stock.
- Let simmer for 2 or 3 minutes until the juice from the veggies begins to disappear.
- 3 Add the veggie stock, one cup at a time. Bring the mixture to a boil, then reduce to medium, cover, and let simmer for 25
- minutes until the liquid is gone.
- 4 Remove from heat and let cool for 10 minutes before serving.
