How to make it

  • 1 Heat the oil in a good sized pot. Add the rice and cook on high until the rice starts to brown.
  • 2 Once the rice has browned, reduce the heat to medium-high and add all of remaining ingredients except the veggie stock.
  • Let simmer for 2 or 3 minutes until the juice from the veggies begins to disappear.
  • 3 Add the veggie stock, one cup at a time. Bring the mixture to a boil, then reduce to medium, cover, and let simmer for 25
  • minutes until the liquid is gone.
  • 4 Remove from heat and let cool for 10 minutes before serving.

    I just made this rice, and I'm eating it now with a pinto beans recipe I also got on this website. The taste & flavors were just right, but there seems to be a flaw in the list of ingredients. It calls for 1 1/2 cups of water, which I added in step 2 ("add all of remaining ingredients except the veggie stock"), and then 2 more cups of stock. That seems like too much liquid--and as a result, the rice came out mushy and did not hold up to the bean sauce.
    Bottom line: great taste & seasonings, too much liquid!
