How to make it

  • Puree 2cups of the raspberries (I use a potato masher) Add sugar and cornstarch.
  • Cook in a double boiler until thick and clear. Cool.
  • Place remaining berries in bottom of baked pie shell (save a few berries for garnishing.
  • Pour cooled filling over berries in shell. Chill.
  • Beat heavy cream with about 1/4c sifted icing sugar until thick.
  • Mound over top cooled pie and garnish with raspberries and mint if you like.
