Straight From Heaven Raspberry Pie Recipe
I request this pie from my mom for my birthday every year> If you love raspberries you will love this pie, it is so easy to make, looks gorgous and is to die for.

Ingredients
  • 1 9'' one crust pie shell, blind baked.
  • 3T cornstarch
  • 1c sugar
  • 3-4c fresh raspberries, washed
  • 1-1/2c heavy cream (I never measure, so I am not too sure)
  • 1/4c icing sugar

Directions
  1. Puree 2cups of the raspberries (I use a potato masher) Add sugar and cornstarch.
  2. Cook in a double boiler until thick and clear. Cool.
  3. Place remaining berries in bottom of baked pie shell (save a few berries for garnishing.
  4. Pour cooled filling over berries in shell. Chill.
  5. Beat heavy cream with about 1/4c sifted icing sugar until thick.
  6. Mound over top cooled pie and garnish with raspberries and mint if you like.
