Straight From Heaven Raspberry Pie Recipe

Ingredients

1 9'' one crust pie shell, blind baked.

3T cornstarch

1c sugar

3-4c fresh raspberries, washed

1-1/2c heavy cream (I never measure, so I am not too sure)

1/4c icing sugar

Directions

Puree 2cups of the raspberries (I use a potato masher) Add sugar and cornstarch.

Cook in a double boiler until thick and clear. Cool.

Place remaining berries in bottom of baked pie shell (save a few berries for garnishing.

Pour cooled filling over berries in shell. Chill.

Beat heavy cream with about 1/4c sifted icing sugar until thick.

Mound over top cooled pie and garnish with raspberries and mint if you like.
