Cod in Salsa Verde

- 1 lb. (total) cod fillets shopping list
- kosher salt shopping list
- Freshly ground black pepper shopping list
- 1 poblano chile, seeded, roasted* and chopped shopping list
- 1 bunch scallions (about 6) shopping list
- 1 cup purchased green tomatillo salsa shopping list
- 1-2 cloves garlic, smashed shopping list
- 2 tbsp. olive oil shopping list
- 1 tsp. Mexican oregano shopping list
- 1 tsp. dried thyme shopping list
- *To roast poblano chile, place under broiler 5 minutes, until skin begins to blacken and blister. shopping list
How to make it
- Preheat oven to 400°F. Season both sides of cod fillets with salt and black pepper, to taste, then place in lightly oiled baking dish. In blender or food processor, combine remaining ingredients and process to a thick, sauce-like consistency. Cover fillets with sauce mixture and bake uncovered until done, about 8 to 10 minutes.
