Ingredients
  • 1 lb. (total) cod fillets
  • Kosher salt
  • Freshly ground black pepper
  • 1 poblano chile, seeded, roasted* and chopped
  • 1 bunch scallions (about 6)
  • 1 cup purchased green tomatillo salsa
  • 1-2 cloves garlic, smashed
  • 2 tbsp. olive oil
  • 1 tsp. Mexican oregano
  • 1 tsp. dried thyme
  • *To roast poblano chile, place under broiler 5 minutes, until skin begins to blacken and blister.

Directions
  1. Preheat oven to 400°F. Season both sides of cod fillets with salt and black pepper, to taste, then place in lightly oiled baking dish. In blender or food processor, combine remaining ingredients and process to a thick, sauce-like consistency. Cover fillets with sauce mixture and bake uncovered until done, about 8 to 10 minutes.
