Ingredients

4 egg whites

1 C caster sugar

3tsp cornflour and 1 tsp white vinegar

3 kiwi fruits , 1 punnet strawberries - siced

1 passionfruit pulp

1 C whipped cream

Directions

Pre heat oven at 150 deg .

Beat egg whites until peaks form .

Add sugar slowly while continue beating until it is dissolved .

Fold in vinegar and cornflour .

Cut a 20 cm circle on a baking paper .

Put in a baking tray and spread the meringue on the paper .

Shape it evenly , making furrows on the edge .

Bake for 40 mins or until pale and crisp .

Leave it in the oven to cool with the door ajar .

( Can keep this for 6 hours )

Spread whipped cream and top with fruits .

Drizzle with passiuon fruit pulp and serve .

( Once decorated serve within an hour )
