Mississippi Mud Pie Recipe


MISSISSIPPI MUD PIE Recipe
This one is certain to leave them wanting more. A great "no fuss" dessert.

Ingredients
  • Crust
  • You can buy a chocolate crust or make the one below.
  • Filling
  • 2/3 cup sugar
  • 1/3 cup each: cocoa powder and cornstarch
  • Couple dashes salt
  • 2-1/2 cups milk
  • 4 large egg yolks
  • 1 teaspoon vanilla
  • 2 tablespoons butter

Directions
  1. Crust:
  2. Preheat oven to 375.
  3. In a food processor, grind 25 chocolate wafer cookies (not filled ones like Oreos) and 1/2 cup pecans or other nuts (or no nuts if your guests do not like them).
  4. Add 3-4 tablespoons melted butter (you may need only 3 if you don't add nuts) and process until moistened.
  5. Press into bottom and up sides of a 9" pie plate.
  6. Bake about 8-10 minutes and cool.
  7. Filling:
  8. Put sugar, cocoa, cornstarch and salt into a saucepan. Whisk to remove any lumps.
  9. Start adding milk, a few tablespoons at a time, whisking as you go. This will incorporate the cornstarch and cocoa into the mixture.
  10. Whisk in yolks.
  11. Cook over medium heat, whisking constantly just until the first large bubble forms.
  12. Turn to low and cook 1 minute, still whisking. Remove from heat and pour through a sieve into a bowl - this will insure a real smooth filling.
  13. Stir in vanilla and 2 tablespoons butter.
  14. Pour into crust.
  15. Spray a piece of plastic wrap and put that, sprayed side down, on top of the crust.
  16. This will prevent a skin from forming. Chill anywhere from 2 to 24 hours or so.
  17. Serve with whipped cream and a sprinkling of nuts.
