How to make it

  • Crust:
  • Preheat oven to 375.
  • In a food processor, grind 25 chocolate wafer cookies (not filled ones like Oreos) and 1/2 cup pecans or other nuts (or no nuts if your guests do not like them).
  • Add 3-4 tablespoons melted butter (you may need only 3 if you don't add nuts) and process until moistened.
  • Press into bottom and up sides of a 9" pie plate.
  • Bake about 8-10 minutes and cool.
  • Filling:
  • Put sugar, cocoa, cornstarch and salt into a saucepan. Whisk to remove any lumps.
  • Start adding milk, a few tablespoons at a time, whisking as you go. This will incorporate the cornstarch and cocoa into the mixture.
  • Whisk in yolks.
  • Cook over medium heat, whisking constantly just until the first large bubble forms.
  • Turn to low and cook 1 minute, still whisking. Remove from heat and pour through a sieve into a bowl - this will insure a real smooth filling.
  • Stir in vanilla and 2 tablespoons butter.
  • Pour into crust.
  • Spray a piece of plastic wrap and put that, sprayed side down, on top of the crust.
  • This will prevent a skin from forming. Chill anywhere from 2 to 24 hours or so.
  • Serve with whipped cream and a sprinkling of nuts.
