Ingredients
  • 1 c thinly sliced fresh mushrooms
  • 1/2 c chopped onion
  • 1 tbsp margarine or butter
  • 2 1/2 c chicken broth
  • 1 (16 oz) can pumpkin
  • 1 (12 oz) can (1 1/2 c) evaporated skim milk
  • 1/4 tspn pepper
  • 1/8 tspn salt (to taste)
  • dash ground cinnamon
  • 2 tbsp fully thawed orange juice concentrate
  • sliced green onion and/or roasted pumpkin seeds to garnish

Directions
  1. In a large saucepan, cook mushrooms and onion in margarine until tender.
  2. Add broth, pumpkin, milk, pepper, salt and cinnamon. Heat through, but do not boil.
  3. Stir in concentrate, heat again, still not boiling.
  4. Garnish with green onion and/or pumpkin seeds.
